Tasting Notes
Passito wine is a luscious, dessert-style wine made from grapes that have been naturally dried to concentrate their sugars and flavors. This process, known as “appassimento,” enhances the wine’s richness, resulting in a deep golden to amber hue and an intense bouquet of dried fruits, honey, and floral notes. On the palate, Passito wines offer a perfect balance between sweetness and acidity, with flavors of apricots, figs, candied citrus, and delicate spice. Often aged in oak barrels, they develop complex aromas of vanilla. Best enjoyed as a dessert wine, Passito pairs beautifully with blue cheeses, pastries, or simply sipped on its own for a luxurious tasting experience.
Passito

Region of Origin
Located in central Italy along the Tyrrhenian coast, Tuscany is home to some of the world’s most notable wine regions. Toscana IGT is the most famous – and the most commonly used – of Italy’s Indicazione Geografica Tipica (IGT) titles. The geographical region it indicates is, in short, Tuscany. Toscana IGT wines can be made in any village in any of Tuscany’s 10 provinces.
The Grapes
Passito wine is a sweet wine obtained through the vinification of grapes harvested later than in normal harvests. The grapes destined for drying are left on the vine for longer to ensure that the water evaporates and that the concentration of sugars in the grape is greater. The harvest for sweet wines is carried out at the end of October, instead of August-September. Passito IGT Toscana Rosato is made with the blend of red and white grapes grown in Tuscany.
